沙薑鳳爪
材料:
雞腳 1--1 1/2 磅
湯料:
沙薑粉 2湯匙
紹興酒2湯匙
鹽2茶匙
糖1湯匙
醬油2湯匙
蒜頭6-8粒(去衣)
冬菰素1湯匙
水 500-600g
製法:
1,早一晚預備一大瓶冰水
2,雞腳用滾水出水數分鐘,取出雞腳浸入冰水
(使雞腳涼凍)去水瀝乾
3,湯料煮滾,放入雞腳,用小火煮15分鐘,熄火,
蓋著,浸30分鐘即可食用
分享經驗:
*湯料內可加入2粒八角,使香味稍濃味.
*如用雞翼,在湯料中小火煮30分鐘,熄火浸30分鐘.
